We all like " Quick and Easy" recipies. In the freezer, I have pulled out a bag of sweet corn that we grew this past summer. This quick and easy recipe will warm up the tummy when added to your dinner table this cold winter day.
Prep time: 15 minutes
Cooking time: 5 minutes
1 teaspoon butter
1 quart size bag of frozen farmer's market Sweet Corn ( if you make this in the summertime , use 2-3 ears of fresh corn, cut kernels from the cob)
1/2 red onion, diced
1 teaspoon of parsley ( fresh is preferred but I am cutting from my potted parsley plant) but dried parsley will work.
Salt to your taste
Ground Black Pepper to your taste
1 tablespoon chopped chives
Heat the butter/margarine in a saucepan , over a medium heat.
Stir in the sweet corn and red onion.
Cook for 5 minutes.
Min in the parsley and season with salt and pepper to your taste.
You may garnish with chives to serve.
